FOR TODAY


Outside my window...
It is only 66 degrees today!!  Sun is shinning, cool breeze...I love this weather.

I am thinking...
about all that needs to be done around here.  We are home finally BUT we still are having plumbing problems!!

I am thankful for...
refreshing cool days in the summer

From the learning rooms...
life skills...we never stop learning

From the kitchen...
pasta with cheese and fresh peas
5 gallon bucket of fresh peas waiting to be frozen

nothing at the moment

to our favorite museum Saturday and Sunday.  Our daughters have been asked to participate in the 4th of July parade at the museum!!

Cooking Thursday


Salsa

10 cups chopped tomatoes
8 jalapeno peppers chopped (remove seeds from half of them)
3 cups chopped onions
1 cup chopped green peppers
3 cloves garlic, minced
1/2 cup chopped cilantro
1 1/3 cups vinegar
1 can tomato paste
1 tsp. cumin
1 Tablespoon red pepper flakes
3 Tablespoons pickling salt
3 Tablespoons brown sugar

Simmer all ingredients for 1 hour.
Stir in 1/3 cup cornstarch diluted in cold water and simmer for several minutes.
Ladle into hot jars & seal. Process in canner according to directions on canner.

CSN Store Review

When CSN Stores contacted me to do a review, I was thrilled!  I couldn't wait to start shopping.  It took me a long time to decide what I wanted.  My husband and I talked about it, we went back and forth from camping equipment to a kitchen appliance. 

Then we finally decided what we really needed was a spot cleaner.  So I looked around.  We went with the Bissell Little Green Compact Deep Cleaner!  I love this machine.  As many of my readers know we are undergoing a bathroom remodel.  I have gone from room to room cleaning everything out.  I used the machine to steam clean all of our mattresses!  AHHH so fresh smelling.  I also used it on a couple of areas on our couch where something had been spilled a long time ago.  It came right out!!  I was going to post pictures...but I didn't want you to see how dirty everything was...LOL!

I'm telling you if you ever have any shopping needs you really need to check out CSN Stores first.  If they don't have it...you don't need it!! LOL!

Book Review~~Captivating by John and Stasi Eldredge


This book was a great read!  I felt as if I was sitting down with a great friend over coffee.  This book was written from both of their point of view.  It was great to see each side of the coin so to speak.  The book dove into the issues at hand for many women in today's world. 

It is not your everyday book on being feminine.  I really recommend you read this book for your self.  One quote I really liked from the book is: "To offer your heart is to offer your desire-instead of your demand."

Cooking Thursday~~Dilly Beans

My mom has been making these beans for as long as I can remember.  I thought I'd share this with you.  I got our beans planted late this year, but I think it will be a blessing because they will be ready later...less heat in the kitchen while making these.  ENJOY!

6 cups water

1 cup pickling salt
6 cups pickling vinegar
(I admit...I used just regular white)
8 heads fresh dill weed
1/2 cup pickling spice
1/2 cup mustard seed
8 dried red chili peppers
(I only had crushed so I used 1/2 tsp)
16 cloves garlic, peeled
1 tsp alum
5 pounds fresh green (I used yellow) beans
rinsed and trimmed.)
(Or mini carrots, i really want to try these!!)

1. Sterilize 8 (1 pint) jars in boiling water for at least 5 minutes.

2. combine the water, pickling salt and vinegar in a large pot and bring to a boil. When it begins to boil, reduce heat to low and keep at a simmer while you pack the jars.

3. In each jar place the following: 1 head of dill, 1 tbsp of pickling spice, 1 tbsp of mustard seed, 1 dried chili pepper (1/8 tsp crushed,), 2 cloves of garlic, and 1/8 tsp of alum. Pack beans into the spiced jars in a standing position.

4. Lade the hot brine into jars, leaving 1/2 inch of space at the top. Screw the lids onto the jars and process in a hot water bath for 6 minutes to seal. Store at least 2 weeks before eating.

Review~~Molly Money Saving Digest June



This digest is filled with many ideas of how you can have a successful business working from home.  Those were great articles but what I really enjoyed the section in "Something Old, Something New".  There they show how to take everyday products and make something new with them.  We are going to try and make these items:

A very cute basket made out of plastic tops and a plastic bag. 

Turn an old sweater into a purse/bag...these would make some cute Christmas gifts.

Coasters made out of yet again a sweater, a canned chicken can, plastic tops...this one is my favorite one!!

Then a very cute and easy bird feeder also made out of recycled materials.

How great is that??  We all have these items around the house.  Instead of throwing the stuff away turn it into a neat "something".

Pondering Home PT 2

I posted a few days ago about pondering home.  I posted the Beatitudes For Homemakers by Ella May Miller and said I was going to post my thoughts about each section.  I was a bit ambitious in saying I'd do it daily...LOL!  I'll do it weekly hopefully on Saturdays.

Blessed is she whose daily tasks are a work of love; for her willing hands
and happy heart transform duty into joyous service to all her family and God.

Until recently I looked at my daily tasks as something dreadful!  Something I just did not want to do.  But I realize now that everything I do needs to glorify God.  If I am complaining and grouchy each time I have to complete a task or do something I just don't want to do I need to stop and thank God for the healthy hands for which I will complete my tasks.  Also, thank Him for my healthy family for whom I am caring for.

I can not train my daughters to be keepers at home if I myself and not keeping home with a joyous heart.  Once we are back home I'm going to work very hard at being joyous in my daily chores.

 And my soul shall be joyful in the LORD; It shall rejoice in His salvation.

Cooking Thursday

I first made this cake last year with my kids while doing a math lesson.  I found the recipe on the back of a ticket from the Genesee Country Museum...our favorite place to go as many of my readers know!!

They recently posted the recipe again and my kids and I made it again.  We have decided it will now be our recipe to make to celebrate the end of our school year!!  It is by far the easiest to make...I am going to try it next time with applesauce instead of all the butter.  ENJOY!!  I used a 13 x 9 pan...but you could probably use round cake pans as well.  You will never want to buy a mix again!!

1234 CAKE


1 Cup Butter
2 Cups Sugar
3 Cups Flour
4 Eggs

Mix together and pour into a pan and bake for an hour at 350 degrees. You can add any flavoring you wish to this and while it's nice served with fruit it is perfectly acceptable on it's own.

I recently came across Stillmeadow Seasons a series of books written by Gladys Taber.  These are GREAT books, if you can find them.  Check out your local library OR look in thrift stores.  I would love to read these books.

I've been thinking alot lately about keeping home.  What kind of homekeeper am I?  I do not really know the answer to this question.  I am a little bit of everything.  Sometimes our home is so clean it looks and smells great!  Those are the days I WISH people would just stop over for some coffee!! Then there are other days when our home is such a mess that I have no idea where to start. 

Not being in our home has made me want to share more about who I am and what
 Christ has done with me in a number of areas and my role as a homemaker is a favorite. I am sharing all of the good only possible by the Light that Christ shines through me to give HIM all the glory for and it allows glimpses into the not so good parts of me that show just how weak I am without Him.

Daughters of His Story Paper Doll Collection Give a way


Our daughter loves dolls of any kind!  She will play for hours with them.  She saw these not long ago in a magazine and said she wanted them.  We just have not had extra money for them.  Raising Homemakers are giving away a set of their 3 books!

For whatever reason...if you do not have water for your gardens, put out a large barrel or bucket and pray for rain!! LOL! It worked for us this week.

Review~~Women of Faith CD


Where do I start?? When I was chosen to review this CD I was SO excited. I have always wanted to attend a Women of Faith event, but have never had the opportunity to…it just has not been in the budget…sadly it is not in the budget again this year with all our house troubles.

Anyway, what a blessing it has been to have been chosen to review this. I got the Women of Faith Worship CD yesterday in the mail and immediately popped it into the CD player!! WOOHOOO is all I have to say. With songs like:

With songs like those there is no way it could be a bad CD! I must say they are all great songs!! I will be listening to this CD for years to come, but my one song really spoke to me….#8 on the CD Healer written by Mike Guglielmucci.

Nothing is impossible with God even healing…I am an example of this. In 2008 it was discovered that I had broken my back. Doctors told me that I may never recover feeling in my feet and I might have to live with chronic pain. After many months of praying, and doing as my doctors told me I am SO blessed to have only minimal numbness in my legs and a slight tingle in my feet…BUT no pain!! I can live with the rest. Praise the Lord!! Below are the words to this song.

Cooking Thursday

I don't know about you, but when the temperatures are rising, the last thing I want is a hot and heavy lunch!  This salad is very light.

Chopped Greek Salad with Chicken

From EatingWell: July/August 2009

Ingredients
• 1/3 cup red-wine vinegar
• 2 tablespoons extra-virgin olive oil
• 1 tablespoon chopped fresh dill, or oregano or 1 teaspoon dried
• 1 teaspoon garlic powder
• 1/4 teaspoon salt (I leave this out, there is many items with salt already in them.)
• 1/4 teaspoon freshly ground pepper
• 6 cups chopped romaine lettuce
• 2 1/2 cups chopped cooked chicken
• 2 medium tomatoes, chopped
• 1 medium cucumber, peeled, seeded and chopped
• 1/2 cup finely chopped red onion
• 1/2 cup sliced ripe black olives
• 1/2 cup crumbled feta cheese

Preparation

1. Whisk vinegar, oil, dill (or oregano), garlic powder, salt and pepper in a large bowl. Add lettuce, chicken, tomatoes, cucumber, onion, olives and feta; toss to coat.

Weekend Happenings...

We had a great weekend...once we got there.  We decided to take our new to us truck.  About an hour from our camp we heard this awful noise followed by a nasty noise from the engine.  My husband loves how I describe engine noises!! Anyway, my wonderful brother drove almost an hour to fix our truck...at least so we could continue on our journey.

This is the tabernacle where we spend a lot of our time.  We study scripture, worship God in song, and fellowship.


What's camping without fires?  We have one each night we are there...weather permitting.  We made smores and sang hymns around the campfire.
