January 2012 Soup Swap~~Alphabet Soup


My kids have always loved Alphabet Soup.  We are trying to do a way with "Convince" foods.  So I started searching for a recipe for our kids favorite soup.  After finding a few, changing this and that, I came up with this one. 

HEY Milk & Honey Mommy....no meat in this one!!  Well unless you count the bouillon cube.

Alphabet Soup

3 beef bouillon cubes
3 cups of hot water
1 bottle of V-8 juice
1 bag of mixed veggies...I used a large bag
8 ounces of uncooked alphabet pasta
6 cups water
salt and pepper (optional)

Dissolve bouillon cubes in hot water.  Place all ingredients in your normal soup pan.   Add bouillon and water mixture.  Simmer for 20 minutes or until the pasta is done.

This soup is almost as quick to make as it is to open the can and heat up.  You can add so much to this soup!  YUM!!

January Soup Swap~~Beef Enchilada Soup


Beef Enchilada Soup



1 pound ground beef
1 onion chopped
2 green bell peppers chopped
2 cans tomato sauce
2 cans enchilada sauce
2 cans black beans (drained and rinsed)
1 can corn (drained)
1 can diced tomatoes
2 teaspoons ground cumin
2 cups shredded cheese (pepper jack is great in this)

Cook ground beef with onion and peppers until no longer pink. 

Add sauces, beans, corn and tomatoes.  Add cumin and bring to a boil.  Reduce heat and simmer 25 minutes. 

Add cheese stir until melted.  Serve with tortilla chips, sour cream or extra cheese.

2012 Soup Swap~~Stuffed Pepper Soup


I love soup, in all shapes and sizes.  For me it is the ultimate comfort food.  So I was very excited when fellow Crew mate over at Milk & Honey Mommy said she was doing a soup swap.

I posted this last year, but it is our favorite soup! 

Stuffed Pepper Soup
 
2 Pounds Ground Beef
2 Cups Chopped Green Bell Pepper
1 Cup Chopped Onion
2 Jars of Spaghetti Sauce
2 Cups Cooked Long Grain White Rice
2 Beef Bouillon Cube
1/4 Cup Packed Brown Sugar
2 Teaspoons Salt
1 Teaspoon Pepper
 
In a large saucepan or Dutch oven, brown beef with peppers and onion.  Add remaining ingredients, except rice and bring to a boil. Add rice reduce heat; cover and simmer for 20 minutes
or until rice is tender.
 
We like this soup more like a stew so I add more rice then what is called for.  I've also done this in the crockpot.  Just cook up the beef along with the peppers and onions.  Add everything to the crockpot and cook on low for 3-4 hours or until rice is done.
