Crockpot Enchilada Casserole

This is one of those recipes that you can alter to fit your families likes.  I've made this many times.  Sometimes I add corn to it, black olives or a can of black beans. 

Slow Cooker Enchilada Casserole

2 small  tomatoes diced
1 small onion, cut into pieces
1 clove of garlic, minced
1/2 tsp. cayenne pepper
1/2 tsp. salt
1 can tomato paste
1 pound ground beef, browned and drained
8 ounces cheddar cheese, shredded
9 or more corn tortillas (depends on your slow cooker size)

To make the sauce, place tomatoes, onion, and garlic in the blender.  You may need to add some water to the blender, it all depends on your tomatoes.  Blend until smooth.  Then add to a saucepan.  To that add cayenne pepper, salt and tomato paste.  Bring to a boil and simmer 5-10 minutes.  Place a few of the tortillas on the bottom of the slow cooker.  Spoon some of the ground beef, then sauce, then cheddar cheese.  Repeat layers until all items are used.  Cover and cook on low 6-8 hours.

Cooking Thursday~~Baked Mac and Cheese


This is another Weight Watcher's recipe I made this week.  I am really loving this program.  I hate I repeat hate counting calories, fat ect.  The points system of WW does it all for you!


Baked Macaroni and Cheese

12 oz. uncooked macaroni
1/2 cup fat free sour cream
12 oz. fat free evaporated milk
8 oz. low fat cheddar cheese shredded
1 Tbsp Dijon mustard
1/4 tsp salt (I left this out because cheese has salt in it)
1/4 tsp black pepper
1/8 tsp ground nutmeg
2 Tbsp dried bread crumbs
2 Tbsp grated Parmesan cheese

Preheat oven to 350.  Cook pasta and drain.  While pasta is still hot stir in sour cream.

Heat milk in saucepan over medium heat until tiny bubbles appear around the edges.  Reduce heat to low and add cheese and simmer until melted.  Whisk about 2 minutes.  Remove from heat and stir in mustard, salt, pepper and nutmeg.

Pour cheese sauce into pasta mix well.  Place into a 3 quart casserole dish. 

Combine bread crumbs and Parmesan cheese and sprinkle over pasta.  Bake until top is golden.  Around 30 minutes.  1 cup per serving.  WW Points 7.

Cooking Thursday~~Impossible Cheeseburger Pie

This is an old recipe but SO easy and quick.

Impossible Cheeseburger Pie

1 lb ground beef or sausage
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs

Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.

In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.

In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.

Bake about 25 minutes or until knife inserted in center comes out clean.
