Cooking Thursday~~Cinnamon Roll Cake

I have been addicted to Pinterest for sometime now.  I love having everything in one location.  Well the other day I came across this recipe.  I was in a baking mood yesterday so decided to give it a try.  This was SO easy to make.  I love cinnamon anything.  I honestly have never made cinnamon rolls...ever!  AND since my breadmaker busted yesterday as well I needed something take my sorrows away.


Cinnamon Roll Cake

Cake part:
3 C flour
1/4 tsp salt
1 C sugar
4 tsp. baking powder
1 1/2 C milk
2 eggs
2 tsp. vanilla
1/2 C butter melted

Topping:
1 C butter softened
1 C brown sugar
2 Tbsp flour
1 Tbsp cinnamon

Preheat oven to 350 degrees.  Mix the first 7 ingredients together until well combined.  Gradually add the melted butter.  Mix until combined.

Pour into 9 x 13 inch pan that has been greased.  Mix topping and drop onto batter, then swirl with a knife.

Bake for 28-32 minutes.

Glaze:
2 C Powdered sugar
5 Tbsp milk
1 tsp milk

While warm pour over the cake.  If you can stand it...let it sit until it's cool.

Next time I'm going to try and reduce the amount of butter in it.

Saturday nights at 9pm on the NRB channel they play Franklin Springs movies.  They are the makers of Homestead Blessings.  This Saturday we watched "Inherit the Land".

New Recipe I tried...

Angel Food pie squares
1 box angel food cake mix
1 (22 oz) light pie filling

Mix all together...no other ingredients!!  Spread into a 9 x 13 pan bake at 350 for 30 minutes.  Cut into 24 squares.  For the WW people it's 2 points per bar!!

Cooking Thursday~~Cherry Coffee Cake


Sometimes you just need a quick go to dessert.  This is one of those for us.  I think I first saw it in the Bisquick cookbook.  I've used other types of pie filling before as well.

Cherry Coffee Cake

4 cups Original Bisquick® mix
1/2  cup granulated sugar
¼ cup butter or margarine, melted
½ cup milk
1 teaspoon vanilla
1 teaspoon almond extract
3 eggs
1 can (21 oz) cherry pie filling

Glaze
1 cup powdered sugar
1 to 2 tablespoons milk

Heat oven to 350°F. Grease bottom and sides of a 13 x 9 pan with cooking spray. In large bowl, stir all coffee cake ingredients except pie filling stir until well blended.
Spread about 2 1/2 cups in baking pan. Spread pie filling over batter (filling may not cover batter completely). Drop remaining batter by tablespoonfuls onto pie filling.
Bake 20 to 25 minutes or until light brown. Meanwhile, in small bowl, stir glaze ingredients until smooth and thin enough to drizzle. Drizzle glaze over warm coffee cake. Serve warm or cool.
Makes 18 servings

Cooking Thursday~~Chocolate Eclair Cake


This is my husband's favorite dessert!  It is the easiest to make as well.  With only a few ingredients you can whip this up in no time.  Visit Diary of a SAHM for more recipes.

Chocolate Eclair Cake

1 box of graham crackers (different flavors add to this...chocolate, cinnamon ect)
2 packages of instant vanilla pudding
4 cups of milk
1 package of frozen whipped topping
1 container of chocolate frosting

Line the bottom of a 9x13 inch baking pan with graham crackers.
In a large bowl, combine the milk and vanilla pudding according to directions on box.
Fold in the whipped topping. Spread a layer of the pudding mixture over the graham crackers.
Alternate the graham cracker and pudding layers up to the top of the pan.
Heat the container of prepared frosting, uncovered in the microwave for 1 minute on half power.
Pour over the top of the cake.
Refrigerate for at least 12 hours before serving.
