Easy Funnel Cake

Fair season is here!  That means delicious fair foods for my tummy!  Do you remember the biscuit mix I made a while back?  Well I came up with a recipe to make our own funnel cake at home using this mix!!  Now this is not something I will make very often.  But I will make them for special occasions, or when we are longing for summer in the dead of winter.

This was a fun activity to do with my daughters.  We have had a girl evening.  We watched our favorite episodes of I Love Lucy.  We absolutely love the episode "Job Switching" where Lucy and Ethel get a job in a candy factory.  Ricky and Fred take over the housework.  SO funny!!  Now that my kids are teenagers (and beyond) they are not so fond of spending time with me.  So when I get these golden moments I just make them count.  That is where these babies come into play.

So I think I've babbled on for sometime now.  Onto the recipe.

Easy Funnel Cake

2 cups biscuit mix
1 cup milk
2 eggs
1/4 teaspoon vanilla extract
Vegetable Oil (enough to fill your heavy duty pot with 1 inch of oil)

Place the oil into a heavy duty pot or cast iron pan.  Heat the oil so it reads 360 degrees on a thermometer. 

Mix all of the ingredients until well combined.  Place the mixture into a funnel or container with a nozzle.  I saved one of our ketchup containers.

Once the oil has reached the right temperature, pour some of the mixture into the hot oil.  Fry for 30 seconds (I am not kidding on this it cooks fast!) the flip over and cook a few seconds.  Remove from the pan and drain on a paper towel. 

Sprinkle with powdered sugar, cinnamon sugar or chocolate (although many of you know my feelings on chocolate.  Those that don't know...I don't like chocolate).

I am not usually a fan of frying foods in our house.  I don't like the smell it gives off.  It seems to linger in the house for days after.  But let me say these are SO worth the couple of days of smell in our house....I think.  {Smiling}
