Blueberry Muffin Bread

I love muffins and I love quick breads.  So why not combine the two??  We were recently blessed with a lot of blueberries.  I've been busy this week baking and making with these delicious berries. 


Blueberry Muffin Bread

1 cup white sugar
1/2 cup butter, softened
2 eggs
1 cup milk
2 cups flour
2 teaspoons baking powder
2 cups blueberries

Cream the butter and sugar until well mixed.  Add the eggs and milk.  Make sure all of these ingredients are incorporated together.   In a separate bowl mix the flour and baking powder together.  Gradually add the dry ingredients to the wet ingredients.  Mix just until combined.  Gently add the blueberries.  Fold them in gently so you don't break the berries.

Pour the batter into a greased 9 inch bread pan.  Bake in a preheated 350 degree oven for 60 minutes.  Let the bread cool in the pan for about 10 minutes.  Remove the bread and slice.  This is good warm or cool.  We just loved this bread!!

I agree. It looks delicious and I happen to have frozen blueberries on hand (better than nothing when a recipe like this comes along.)

I love blueberry muffins and quick breads. It looks delicious, the ideal breakfast or afternoon treat with a hot cup of coffee or tea!
