Slow Cooking Thursday

This is a good recipe to use when you have a lot of left overs. The recipe calls for canned veggies but I use frozen veggies that are thawed slightly. I also mix some of the cheese into the potatoes before placing in the crock pot.

Shepherd's Pie

1 pound ground beef/turkey browned and drained
1 can Tomato soup, condensed
1 can corn, drained
1 can green beans, drained
2 cups mashed potatoes
2 cups grated cheddar cheese
1/2 dried basil

In separate bowl, combine all ingredients except potatoes. Pour into greased slow cooker. Spread mashed potatoes on top. Cover and cook on low heat 5-6 hours. Last hour of cooking sprinkle cheese on top.

Ok I am a MAJOR sheperd's pie fan. I have never made it in the crockpot before but now I will certainly have to try it out. Thanks for sharing.
