Easy Pumpkin Bread

We got our first snowfall yesterday but not enough to warrant making gingerbread.  So I decided to make some pumpkin bread. 


Easy Pumpkin Bread

1 2/3 cup flour
1/4 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 pinch of cloves
1 1/3 cup sugar
1/3 cup shortening
1/2 teaspoon vanilla
2 eggs
1 cup pumpkin puree
1/3 cup water

In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves.  Whisk until it is well combined.

In the bowl of a stand mixer (or by hand) cream the sugar, shortening and vanilla until well blended.  Add the eggs one at a time until mixed thoroughly.  Stir in the pumpkin.  Add the dry ingredients and water beating until smooth.

Place the batter into a greased 9x5x3 inch loaf pan.  Bake at 350 degrees for 45-55 minutes.


This bread is so moist and delicious!  Next time I may add dried cranberries and walnuts.

Yum. We just enjoyed some pumpkin cornbread last night.

I do think we are all headed for quite a harsh winter this year. Your pumpkin bread looks amazing, yum.
