Hamburger Soup

When it comes to soup making my grandmother is the best.  She was the one who taught me that soup was the best way to feed a family on a limited budget.  Once you have the base you can pretty much throw anything in it.
 
This soup is one of my grandmother's recipes.  When I was making it I was immediately transported back to when I was a kid.  The smell that came from my kitchen was the same as my grandmothers.  Standing in her small kitchen watching her work her "magic" to create a very delicious dish.  
 
 

Hamburger Soup
 
2 pounds hamburger
2 cups chopped onion
2 cups chopped carrots
2 cups chopped cabbage
2 cups chopped potatoes
2 cans diced tomatoes
3 cups water
salt and pepper to taste
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
 
Brown the hamburger in a large stock pot or soup pot.  Drain the hamburger well.  Add the onion, carrots, cabbage, potatoes and tomatoes.  Cook for about 2-3 minutes.  Add the water, salt, pepper, basil, and thyme.  Bring the soup to a boil.  Cover and reduce heat to low and simmer for 2 hours.

I make this all the time for my family! It's my grandmother's recipe as well! Right down to the cabbage! Probably a product of the Great Depression Era.

Love soup, usually Sundays are our soup days, paired with a sandwich, nothing better :)
