Cornbread

I have tried recipe after recipe for cornbread.  They are either too gritty or too much like a cake.  So I went to my old cookbooks.  I actually decided to put 2 different recipes together to get this one.  One was from a Pioneer cookbook I have.  I love recipes from the pioneer era.  Especially when they are written down with ingredients listed in "a little of this and a little of that".  Or my favorite "bake in a moderate oven. 

So since I do not have a hearth to cook in or a tin bake oven I have to decipher what the temperature of the oven should be.  Although I do want to take a class at the museum on hearth cooking. 


Cornbread

1 cup cornmeal
1/2 unbleached flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup oil
2 eggs, beaten
1 cup milk
1 cup cream corn

Combine the dry ingredients and stir to mix.  Add the wet ingredients and mix well.  Pour the mixture into a greased 13 x 9 inch pan.  Bake in a 350 degree oven for about 40-45 minutes.

This has become my family's favorite cornbread recipe.  Next time I make this I'm going to add a little sugar.

Yum. I too have tried so many recipes and still haven't found the one I'm 100% happy with. I'm going to give this one a try and see how we like it :)
