Cinnamon Swirl Banana Bread

Boy did this week get away from me.  It has flown by.  I had intended on posting a different banana recipe each day.  I'm so sorry about that!  Anyway, I'm posting our favorite banana bread recipe I've made this week!  Oh my goodness this is so good.

Cinnamon Swirl Banana Bread

3-4 overripe bananas, mushed
1/3 cup butter, melted
3/4 cup sugar
1 egg beaten
1 teaspoon vanilla
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cup flour
1 cup pecans chopped

1/3 cup sugar
1 tablespoon cinnamon

Prepare a 9 x 5 loaf pan.  In a large bowl mix bananas, butter, sugar, egg and vanilla.  Add the baking soda and salt mixing well.  Gradually add the flour.  Mix just until all the flour is incorporated into the batter.  Add the pecans or walnuts.

Pour half of the batter into the loaf pan.  Sprinkle the cinnamon and sugar over the batter.  Pour remaining batter into the loaf pan.  Then add the remaining cinnamon and sugar to the loaf.  Take a knife and swirl the batter around gently. 

Bake the loaf in a preheated 350 degree oven for 50-60 minutes. 

This bread is by far the best banana bread I've made!!  Usually the loaf is very heavy and oily, this one is so light and full of flavor.

Hey Jen -
I just made this bread again only used zucchini instead of bananas! Its sooo good.
Next week I will try pumpkin.
