Vegetable Tortellini Soup

A guy that we know had a heart attack yesterday at the age of 35!  This has really opened my eyes.  It's time to make some changes to start taking better care of our health.  The guy is scheduled to have a quadruple bipass surgery tomorrow.  If you would take a moment to pray for him I know he and his wife would appreciate it.

So onto the recipe.  I am going to strive to make heart healthy foods for my family.  So this soup is one I came up with.  This is a very simple and basic soup.  You could add just about anything to it.  That is why I love soup so much.  It's good for you (at least most of them) and easy on the budget.



Vegetable Tortellini Soup

1 onion finely diced
4 cloves of garlic (or how much you prefer)
2 tablespoons olive oil
1 box of low sodium chicken stock
1 box of tortellini
1 bag of frozen broccoli
1 bag of frozen carrots
1 bag of frozen green beans
2 boneless skinless chicken breasts, cooked and diced
2 handfuls of spinach (I was out so it wasn't in this)

Add the oil, onion and garlic cook until the onion is tender.  Not too long, you do not want to burn the garlic.

Add the box of chicken stock.  Heat to a nice simmer.  Add the box of tortellini and cook for about 10 minutes on medium heat.  Then add the vegetables, and chicken.  Cook about 5-6 minutes more then add the spinach about 2 minutes before serving.  It all depends on how your family likes their spinach.
