Spaghetti Squash

 
What on earth is this you ask?  That's exactly what my family said when we saw this at the pumpkin patch this weekend.  My mom and I use to eat these all the time.  It is SO good.
 
To make this you cut the squash in half.  You do this just as you would a typical squash.  You will need to scoop the seeds out of the middle.
 
Then place the halves into a microwave safe dish cut side down.  You can roast them in the oven.  That really brings out the sweetness of them.
Microwave for about 8 minutes.  Let it cool so you can handle it.  When it is cool, using a fork, fluff the insides.  You will see what I'm talking about when you start doing this.  It will be a lot of strings that look like spaghetti.  Thus the name spaghetti squash.
 
There are millions of ways you can serve this up.  Serve with simple butter, salt and pepper.  You can serve it with spaghetti sauce.  Or anyway you prefer.  I think it is a bit on the sweet side so I have never served it with sauce.  I usually serve it with butter, salt, pepper and Parmesan cheese.
This stuff is SO good...and very low in calories.  My family loved this!!  I plan on picking up more of these later this week.  They are only $1.00 at our local road side stand!!
