Easy Curly Potatoes


It's been a long time since I've participated in Cooking Thursday hosted by my good friend Sandra.  I've just been so busy lately.  Counting down the days until I complete my degree! 

Anyway, back to Cooking Thursday.  A while ago I had mentioned on Facebook that I wanted an apple corer slicer peeler thing.  I use to have the one from Pampered Chef but got lost somewhere.  Well low and behold my wonderful friend Sandra came through in a big way.  She had 2 and was willing to give me her extra one!  WOOHOO!  I'm so blessed!!  She even gave me this tip on making potatoes with it.  YEA!

Easy Curly Potatoes

Nice firm potatoes, the amount depends on how much you plan on making.
Olive Oil
Seasonings (Salt, garlic ect.)

Preheat oven to 350 degrees.

Peel the potatoes
I love that the peeler clamped nicely onto my bakers rack.

Place the potatoes into a pan and drizzle with oil.  I like to rub the oil in to make sure they are covered well.

Bake in the oven for 25-30 minutes until they are tender.  This will all depend on your oven.

I even put the potato skins in the oven as well.
They were so crisp and yummy!  I'm SO sorry I didn't get a picture of the finished potatoes.  With all the kids here on a daily basis I'm lucky to get them in a raw state.

I'm so glad you are still enjoying the peeler :) And I LOVE curly potatoes too, so easy but so yummy :)
