I've discovered Quinoa!

Hannah has been asking me for sometime to make Quinoa (pronounced "keen-wa").  So we bought some at the store a while ago to try.  I really wasn't sure about it.  But if she was willing to try it, I must as well.

So here is what we did.....

1 cup of Quinoa
1 1/4 cups of liquid (we used chicken stock)

First you need to really rinse the Quinoa very well.  Place the Quinoa in a metal strainer over a large bowl.  Fill the bowl with water and let the Quinoa soak for at least 15 minutes.  After the 15 minutes rince the Quinoa for 2-3 minutes.

Place the liquid and Quinoa in a pot and bring to a simmer.  Reduce heat to low and cook 30-35 minutes.  Remove the pot from the heat and let it sit covered for about 5 minutes.

It is now ready to use in whatever recipe you choose.  We added provolone cheese and a small amount of parmasan cheese.  Let me tell you WE love this!!  I found a really cool website, Cooking Quinoa,  that is all about Quinoa cooking.  If you have never tried this wonderful grain....you must.  It is so good for you!!
