Ginger Drop Cookie Cakes

I am always searching for quick and easy cookie recipes.  This one has to be one of the fastest ones I've ever made.

Ginger Drop Cookie Cakes

3 eggs
1 cup shortening
1 cup molasses
1 cup brown sugar
1 tablespoon ginger
1 tablespoon baking soda dissolved in 1 cup boiling water
5 cups all-purpose flour

Cream shortening and eggs until well mixed.  Add in molasses, brown sugar and ginger.  Mix well.  Add baking soda and water.  Gradually add flour.

Drop by tablespoons onto slightly greased cookie sheet.  Bake at 350 for about 8 minutes.
