I hardly make baked pasta. I tried it once and the pasta was way too crunchy. I just simply gave up. I did lasagna and it came out alright. So I went searching for a recipe that would work. I looked through so many of my cookbooks. I'm surprised at what people actually put into their dishes. Some of them had an ingredient list a mile long! I wanted something quick, easy and meatless. Here is what I came up with. It is a mixture of many recipes I found.
Baked Rigatoni
1 box dried pasta
1 jar Alfredo sauce
1 jar spaghetti sauce
1 cup fresh Parmesan cheese
1 cup plus a little mozzarella
Cook up pasta until almost done. I cooked it 2 minutes less than the box suggested. In a 9 x 13 pan place a small amount of spaghetti sauce in the bottom of the pan. Place half of the pasta in the pan. Pour Alfredo sauce over the top. Sprinkle 1/2 cup Parmesan cheese over pasta. Sprinkle 1/2 cup of mozzarella cheese over the pasta. Top with remaining pasta. Pour the rest of the spaghetti sauce over the top of pasta. Place the rest of the Parmesan and mozzarella cheese over the top. Bake in the oven at 350 degrees for 20-25 minutes or until bubbly.
