Old Fashioned Sponge Candy

This is the easiest candy to make!  It is my Dad's favorite candy.  But it is so expensive to purchase in the stores.

Old Fashioned Sponge Candy

1 Cup sugar
1 cup dark corn syrup (I used light)
1 Tablespoon cider vinegar
1 Tablespoon baking soda
1 bag of chocolate chips

Heat sugar, corn syrup, and vinegar to a boil in 2 quart pan over medium heat, stirring constantly, until sugar is dissolved. 

Boil without stirring, until candy thermometer registers 300F. 

Remove pan from the heat; stir in baking soda quickly and mix thoroughly.

Pour mixture in ungreased 13 x 9 baking pan.  Do not spread out.

Let cool and break into pieces.  Coat with melted chocolate.

I did coat a few of the candy completely in chocolate.

But since I don't really care for chocolate, I only did half this way.  This makes a lot of candy.  ENJOY!

I've never heard of sponge candy before but am definitely going to be making this with my kids. Thanks for the recipe!
