Pumpkin Spice Cookies
1 box of yellow cake mix (I used butter flavor yellow cake mix)
2 large eggs
1 tablespoon oil
1/2 cup pumpkin puree (NOT pie filling)
1 teaspoon pumpkin pie spice
Preheat oven to 350. Mix all ingredients in large bowl until well combined. Using a small cookie scoop place on ungreased cookie sheet.
Bake at 17-19 minutes. Cool on cookie sheet for 2 minutes before removing.
These are SO good and very quick to make. This is the batch that the kids wanted to add sprinkles to.
