Slow Cooking Thursday


Since we have been spending a lot of time at camp recently and lets face it...no matter how big your camper is it comes with a teeny tiny stove! Besides I have a "thing" about fire inside of the camper! So I'm taking one of my crockpots to camp this weekend. I can set it up in the morning and go about our day at the lake and come back to a cooked meal!!!
Here is one I've made.....
Taco Casserole
1 lb ground beef/turkey
1 med. onion chopped
1 clove of garlic minced
1/2 cup green pepper chopped
2 drops of hot sauce (more if you like heat)
1 (15 oz.) can tomato sauce
1 tsp chili powder
1 cup corn
2 cans of chili with beans
3/4 lb. grated cheese (I always use more)
Doritos
Brown meat and drain. Add onion, garlic and peppers, cook until tender. Add hot sauce, tomato sauce and chili powder. (I do all this before we leave and freeze it) Grease crock pot and layer ingredients into 5 layers. Start with meat. Add Doritos, corn, chili, and end with cheese. Cover and cook 6-8 hours on low.

We like anything with a mexican kick to it, so this is another we will be trying around here. We are have Cheesy Taco Bowels tonight.

Thanks for the simple recipe. I'm a beginner in cooking. And thus, experimenting with easy cooking recipe is really helpful. :)
