Slow Cooking Thursday

Carrot Cake

1 1/2 cups flour
3/4 cup sugar
2 large eggs
1/4 cup water
1/3 cup oil
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup grated carrots

Combine all ing. in a mixing bowl and mix well. Spread batter in greased slow cooker. Cover and cook on low heat for 2 hours or until firm in the center. Makes 4-6 servings.

I'm going to try and make this low fat and calorie later today. I'm going to substitute egg beaters for the eggs. I'm going to replace the oil with applesauce. I'll let you know how it turns out. Enjoy!!

Carrot cake is a favorite! Carrot cake in the crockpot will only make it that much better!! Very unusual recipe...I have GOT to try this! :) Thank you!!!

I never knew that carrot cake--or any other cake--could be "baked" in the slow cooker! Does the size of the crock matter? I have a 2-quart and a 6-quart model, and I would imagine that the cooking times would be different.

There are so many neat things you can make in the crock pot. I really like the desert ideas, that takes the work out having a sweet tooth.
