This recipe I got from one of my new cookbooks, Pillsbury's Best of the Bake-Off. I've linked to the website. Enjoy searching through all the wonderful recipes. We loved this recipe. It is a great way to stretch your food dollar. Stir frys go such a long way and it gets your family eating veggies. Next week we will be trying a chicken curry stir-fry.
1 lb beef steaks cut into strips
2 garlic cloves minced
1 tablespoon oil
1/4 teaspoon cayenne pepper
1 package oriental ramen noodles
2 cups water
1 bag frozen broccoli, carrots, water chestnuts and red peppers (usually called a stir fry mix)
1 teaspoon oil
1 jar whole mushrooms, drained (I used fresh)
1 tablespoon soy sauce
4 green onions (optional)
In bowl, combine beef, garlic and 1 tablespoon oil, pepper and set aside.
Remove noodles from package, save seasoning packet. Bring water to boil in a large pan. Break noodles into 3 pieces and add to water with frozen veggies, bring to a boil again. Reduce heat and simmer uncovered 2-3 minutes or until veggies are crisp-tender, stirring occasionally. Drain well. Return mixture to saucepan, stir in seasoning from packet. Cover; keep warm.
Put the other tablespoon of oil in large skillet over medium high heat add steak. Cook until meat is no longer pink. Add veggie mixture, mushrooms and soy sauce. Heat thoroughly. Garnish with green onions.
