Slow Cooker Thursday

I found this recipe a few years back but had never tried it until this week. I have doubled the recipe. This is by far the easiest tapioca pudding recipe I've ever seen. Just make sure you stir frequently or you will have some big lumps. ENJOY!!

Slow cooker Tapioca Pudding

8 cups milk (whole)
1 1/3 cup white sugar
1 cup small pearly tapioca
4 eggs, lightly beaten

Stir together milk, sugar and eggs in slow cooker. Then add the tapioca (you do not need to soak them for this recipe, but I did rinse them) Cover and cook on medium (my crockpot does not have this setting) for 3 hours, or on Low for 6 hours (this is what I did) stirring occasionally. Serve Warm.
