Dilly Beans and What to do with a LARGE Zucchini

I had a request for the recipe for Dilly Beans. This recipe has been in my family a long time.

Dilly Beans
3 pounds of string beans (green or yellow)
2 tsp. red pepper flakes
4 cloves of garlic
4 heads of fresh dill
2 cups cider vinegar
2 cups of water
1/4 cup coarse salt

Makes 4 pints

Blanch green beans about 3 mins. Put in a bowl with ice water to stop the cooking.
In a clean hot jar place green beans, 1/2 tsp. red pepper, 1 clove of garlic, 1 head of dill in each jar.
Bring vinegar, water, salt to a boil.
Pour liquid over beans, leaving 1/2 inch head space. Place tops on and process for 10 minutes in a water bath.

Yesterday my son came up to the house with this enormous zucchini! I thought what on earth are we to do with something of this size...stuff it of course!!! Well we cut it in half and scooped out the seeds. We made a filling to go into it of hamburger, tomato sauce, rice (just like stuffed peppers) then topped it with mozzarella cheese. But I'd leave the cheese off next time and add right at the end of baking. Bake it on a cookie sheet at 350 for about 35-40 minutes. Then add the cheese. It was very good! The zucchini didn't turn into a big pile of mush like sometimes.
