Bacon Cabbage and Potato Skillet

We have been blessed with so many wonderful things over this past year.  One being able to purchase some fresh pork.  We got bacon, sausage, pork chops ect.  It's things like this that make me miss farm life.  I remember watching my Dad and Grandfather butcher the pigs. 
 
Our church was also blessed with a bunch of fresh produce.  So that is where this dish came from.
 
 

Bacon Cabbage and Potato Skillet

8 slices of bacon
1 onion sliced
2 garlic cloves finely chopped
1 large head of cabbage shredded
4 large potatoes sliced
2 cups chicken stock

In a large skillet or pan cook the bacon until crispy.  Reserve 2 tablespoons of the bacon grease.  Remove the bacon to a paper towel to drain.  Discard the rest of the bacon grease.  OR like I do save it in a jar to use later.

Add the onion and garlic to the pan with the reserved bacon grease.  Cook until the onions start to become browned.  Add the cabbage, potatoes and chicken stock reduce heat to a simmer cover and cook for about 20 minutes.

This was SO yummy!  My husband even loved it.  It is one I will be making again and again.
