Garlic-Lemon Chicken in the Pressure Cooker


Last year for my birthday my husband got me a pressure cooker.  It's a 3-in-1 cooker...slow cooker, pressure cooker and steamer all in one.  I love it!!  Especially on a day like today.  I took the chicken out of the freezer yesterday to thaw.  Checked it this morning...still frozen.  GRRRR!  So out comes my kitchen saver.  I love this baby!!

A while ago I got "The Easy Pressure Cooker Cookbook".  This book is full of wonderful recipes.  This is one I changed around a bit for us.


Garlic-Lemon Chicken

3 tablespoons oil
2 teaspoons salt
2 pounds chicken parts bone-in
4 garlic cloves minced
pinch of red pepper flakes (I used Cayenne)
1 teaspoon dried oregano
1 cup chicken stock
1/2 cup fresh lemon juice (I used the bottled kind)

Brown the chicken in the pressure cooker with the oil until nice and brown.  Add garlic, red pepper flakes and oregano.  Cook for about 1 minute.  Watch carefully...you do not want the garlic to burn.  Add lemon juice and chicken stock to the pot.  Place chicken in and seal with the lid.  Cook at high pressure for 15 minutes. 

Let the pressure come down naturally and then remove the lid.  Remove the chicken.  Bring the sauce to a boil and thicken anyway you wish.  I use rice flour and water.  Boil until thick. 

I tell you this was SO good!!  Next time I will use boneless skinless chicken.  It would be great on a salad!!

I love my pressure cooker.  Even from a frozen state the chicken was done all the way and very juicy.  Kids said, "and it wasn't dry".  LOL!  Best part of this machine, is it's electric....so I don't have to stand at the stove and watch.

I'm confused. You browned frozen chicken?

Yes. I tried it today and my chicken wasn't completely thawed. Throw it in, hit saute, do that for about 5 minutes then remove. Change setting to manual and let it heat up and add chicken back and place top on and set time.
