I have been cooking A LOT with my cast iron pans in the past few weeks. I have a pan I got from my grandmother that I just finished seasoning. I do not know what it is about cast iron pans, but I'm SO drawn to them. It might be the feel of years gone by, everytime I cook something in them it is the best. So I got thinking...why stop at just meals? I decided to start making desserts in them as well. I thought I'd start small and work my way up the sweet chain.
You could probably take any cookie recipe and put it in the pan.
Giant Chocolate Chip Cookie
1 1/4 cup flour
2 Tablespoons cornstarch
1/2 teaspoon salt
1/2 teaspoon baking soda
1 large egg
2 large egg yolks
3/4 cup firmly packed brown sugar
1/4 cup white sugar
1 tablespoon vanilla
1/2 cup butter melted plus 2 teaspoons to butter the pan
1 1/2 cup semi sweet chocolate chips
Preheat oven to 350 degrees and rub 2 teaspoons of butter in the pan, up the sides and bottom. Whisk together flour, cornstarch, salt, baking soda together. In another bowl with an electric mixer, beat egg and yolks until frothy. Beat in brown sugar, white sugar, vanilla and melted butter until smooth. Add flour to mixture and beat on low until combined. Mix in chocolate chips.
Spread dough evenly in pan. Bake for 23-25 minutes until golden brown and barely set. Cool before slicing...if you can stand it...LOL!

This sounds great. I have several cast iron pans but don't use them much. I never can get the temperature right, and the food always sticks. My grandmother says I don't season them right. I guess I am going to have to get serious about learning how to use them.

I never thought of making cookies in the cast iron. I have one I use exclusively for cornbread, though. Thanks for the idea and recipe.
