Slow Cooking Thursday

We have been trying to go meatless at least once during the week to help cut down on our grocery bill. With the cheese added in you really do not miss the meat. To see other Slow Cooking Thursday recipes visit Sandra at Diary of a SAHM.

Vegetable Cheese Soup

1 can cream corn
3-4 red potatoes, quartered
1/2 cup shredded carrots
1/2 chopped onion or 1/4 cup dried minced onion
1/4 teaspoon pepper
2 cans vegetable broth
1 1/2 cups shredded cheddar cheese

Combine all ingredients except cheese in greased 3 1/2 - 5 quart slow cooker. Cover and cook on high heat 4-5 hours or on low 6-8 hours. Just before serving, stir in cheese until melted. Makes 4-6 servings.

To make it complete serve with a salad, green peas, onions (if your family likes raw ones) and crumbled bacon. A fresh loaf of bread or corn bread would round this out nicely.

I try to do meatless at least once a week too. That sounds pretty good.

That sounds like a great soup. We go meatless as often as I can get away with it :-), which is usually only once or twice a week.
