Foodie Friday

A while ago I said I was going to post my weekly menus. But with all my health troubles we have been pretty much eating from the freezer. I knew there was a reason I had been cooking double meals and freezing one. We have enough for a couple of weeks. Another blessing is I have a Husband who can and likes to cook. Also our 14 yo daughter loves to be in the kitchen, we just need to keep the spices away from her! LOL especially cumin! So every now and then on Fridays I am going to post a recipe our family really likes.

My Mom used to make this recipe a lot. I just thought it was chocolate cake, which I do not like...I do not care for chocolate. I decided to make this one day when we were learning about the great depression. This cake was very popular during that era. I know the ingredients are very weird but my family LOVED it. This is not my picture I got this from AllRecipes. It looks like they put peanut butter frosting on it....hmmm I might try it then, I LOVVVVE peanut butter!
Crazy Cake
3 cups all-purpose flour

2 cups white sugar

1 teaspoon salt

2 teaspoons baking soda

1/2 cup unsweetened cocoa powder

3/4 cup vegetable oil (I used canola oil)

2 tablespoons distilled white vinegar

2 teaspoons vanilla extract

2 cups cold water


Directions
Sift flour, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork. Bake at 350 degrees F for 30 to 40 minutes, or until tooth pick inserted comes out clean.

I love Crazy Cake! Actually Apple Cider vinegar works too. We got the dry ingredients in a jar for our wedding and then All i had to do was add the wet. It called for Cider vinegar..all the other ingredients are the same though.!! Have fun with the P-nut butter!

Found you through a comment on Keeper of the Home (great blog, huh?). Wondered if you were talking about hearing D. Craft speak at a hs convention?
I may have heard the same speaker and was just interested since our dd (5yo) was just diagnosed with an auditory processing disorder. We changed her diet last Jan and it has done WONDERS!

Hey Sorry we missed you at church! We decided to head somewhere else tonight! Tornado was diagnosed on Saturday with his first double ear infection! We all have colds and the like and stayed home this morning so we decided to let him get his 4 th dose of antibiotics in his system.... Funny how this is the first time he has been on them. I think I was more paranoid about that then his vaccinations!
