Layered Chicken Pot Pie

We love chicken pot pie here.  I hardly ever make it.  It is difficult to make enough to feed my whole family.  I was watching an episode of Paula Deen's cooking show and she did something amazing!  She layered the pie dough through out the dish!!  Almost like you would a lasagna.


Layered Chicken Pot Pie

2 pie crust dough-cut into thin strips
2 boneless skinless chicken breasts-cooked and diced
2 bags frozen mixed vegetables
2 cans cream of chicken soup
2 cups shredded cheddar cheese

Mix the chicken, vegetables and soup together.  Place a few dough strips into the bottom of a 13 x 9 baking pan.  Spread some of the chicken mixture over the dough strips.  Sprinkle some cheddar cheese over the mixture.  Add more dough strips and repeat layers until ingredients are gone.  End with dough strips on the top. 

Bake at 350 degrees until slightly brown on top and bubbling.  This was about 25-30 minutes.

I made a woven pattern on top of the dish.  You can do whatever you choose.  The layers inside remind me of a chicken and dumplings texture.  This was SO good.

That looks so good, and I never would have thought to layer it either, I'm going to have to make this one :)
