Slow Cooking Thursday


With temperatures reaching the mid 80's now here in NY the crockpot is becoming my best friend!! Too hot too soon for my taste. This is a classic recipe but very simple. I usually double the recipe to feed my crew.
Chicken and Rice Casserole
1 can cream of celery soup
1 can sliced mushrooms
1/2 cup long grain, coverted white rice
2 boneless skinless chicken breasts, cooked and cubed
1 tablespoon dry onion soup mix
Combine soup, mushrooms, and rice in greased slow cooker. Place chicken on top of mixture and sprinkle with onion soup mix. Cover and cook on low 4-6 hours.
