Slow Cooker BBQ Chicken

 
It has been snowing here for a few days now.  I guess we had it coming to us.  We have not seen this much snow in a few years.  I've been taking pictures all day just enjoying the beautiful snowfall.  We have about 20 plus inches of snow currently.  It is still coming down out there.  This was a perfect day to just stay inside and keep warm.  The kids have had fun shoveling snow here and at our neighbor's house.
 
So on the menu for tonight was BBQ Chicken I found in the Once a Month Cooking cookbook.   I forgot to get the chicken out of the freezer last night so I had to use my pressure cooker.  It came out great!!
 
 
BBQ Chicken
 
6 boneless, skinless chicken breast cubed
2 cups chopped celery
1 cup chopped onions
1 cup chopped green bell peppers
2 cups ketchup
2 cups water
2 tablespoons brown sugar
1/4 up white vinegar
2 teaspoons dry mustard
1 teaspoon pepper
1 teaspoon salt
 
In a large bowl mix the celery, onions, peppers, ketchup, water, brown sugar, vinegar, mustard, salt and pepper.  Mix well.  Place the chicken into a slow cooker and pour the sauce mixture over it.  Cook on low 6-8 hours.  Serve on rolls or bread.
 
If you have a pressure cooker you prepare it much the same as above.  You place it all into your cooker and place the lid on securely.  Set on high for 15-20 minutes.  My chicken was frozen still when I added it.  So if it were thawed you would only need to cook it for about 10 minutes at high pressure.

20 plus inches of snow - WOW! In my neck of the woods, a slight flurry of snow is unusual. :) Can't wait to try your BBQ chicken recipe. Happy New Year to you and your family!

Looks like a yummy sandwich. We've had about 6 inches of snow this winter. I'm sure we will get more.
