Slow Cooking Thursday

I got this recipe from my Sister in Law. We tried it last weekend it was YUM!

Salsa Chicken with Black Beans

4 - 6 boneless skinless chicken breasts (frozen!) (I didn't put them in frozen)
1 or 2 jars of your favorite salsa
1 can of corn (drained)
1 can of black beans (drained) (used dried and soaked them the night before)

Throw it all in your crockpot and cook on low all day. When you're ready to eat, shred the chicken with forks and serve over rice or fill soft tortillas & add your favorite toppings - sour cream, guacamole, shredded cheese, etc.

Enjoy this. It is such an easy recipe to play with.

If I can convince the hubby to let me put corn in it, I will definitely try this recipe out! I love corn in everything, and hubby doesnt like it mixed in. Thanks for sharing, Jen!

Yummy recipe. I love the idea of shredding it and serving it on tortillas! I think I have all these ingredients. I may need to try this tomorrow.

This sounds like some yummy comfort food. Personally, I've never had great results with boneless chicken in the crock pot - usually, it ends up too dry. Maybe I'm doing something wrong? In any case, I'd love to try your recipe so maybe I'll give it a try and see. Thanks for sharing! :)
